A simple & easy prawn pulao makes for a great lunch option.

Ingredients

  • 400 grams rice (washed and soaked in water for half an hour)

  • 1 ltr water

  • For Prawns marination:
  • 400 grams prawns

  • 1 tsp ginger-garlic paste

  • salt to taste

  • 1/2 tsp turmeric powder

  • 1 tsp red chilli powder

  • 1 tsp coriander powder

  • 1 tsp lime juice

  • For Pulao masala:
  • 2-3 tbsp oil/ghee

  • 2 medium sized onions; chopped

  • 2 tomatoes; chopped

  • 2 green chilies

  • 1/2 tsp turmeric powder

  • 1/2 tsp red chilli powder

  • 1 tsp ginger-garlic paste

  • 2 cinnamon sticks

  • 4-6 cloves

  • 3 green cardomoms

  • 1 bay leaf (optional)

  • 1/2 tsp cumin powder

  • 1 tsp lime juice

  • For garnish:
  • 10-15 mint and coriander leaves

Directions

  • Marinate the deveined and washed prawns with ginger-garlic paste, salt, turmeric powder, coriander powder, red chilli powder and lime juice. Coat and mix the prawns well with all these ingredients for at least 30 minutes.
  • Heat oil/ghee in a deep cooking pan and add cinnamon sticks, cloves, green cardomoms, green chilies and bay leaf and saute for a minute on a low flame.
  • Add the chopped onions and fry them until golden brown on a medium to high flame. Then add the ginger-garlic paste.
  • Add the rest of the powder ingredients (turmeric powder, red chilli powder, cumin powder) and mix well.
  • Add in the chopped tomatoes and add a little bit of water to deglaze the pan and cook them untill they become mushy and the oil begins to separate.
  • Add the marinated prawns into this mixture and let them cook for a while. Then toss in the soaked and drained rice and give it all a good mix.
  • Pour in the water and add salt to taste and some lime juice. Let the rice cook on a medium flame for about 10 minutes or until it comes to boil and give it a quick mix.
  • Cover the pan with a lid and let it cook for more 5 to 10 minutes or until the rice is cooked completely on a low flame. Keep checking the level of water and add more water if needed.
  • Turn off the flame once the rice is cooked completely and garnish it with some freshly chopped mint and coriander leaves.
