Coffee Caramel and Macadamia Cake – The BEST, most extravagant coffee caramel cake – giving the cake a lovely caramel flavor!  This cake has been one of the most popular cake recipes in our cookbook and for a very good reason! It’s simply delicious. A glossy Coffee caramel ganache and Coffee glace finishes the top of the cake!

Enjoy the delicious Coffee Caramel Cake with soft Macadamia crunch.

Ingredients

  • 4 eggs

  • 1 cup castor sugar
    —-

  • 1 1/4 cup flour

  • 3 tsp baking powder

  • Pinch of salt
    (Sift together )
    —-

  • 1/2 boiling water

  • 2 tbsp frisco coffee powder

  • 2 tsp vanilla essence

  • 1/2 cup oil
    (Mix these together )

  • Coffee caramel ganache
  • 1 can caramel treat

  • 1 can Nestle cream

  • 1 tsp vanilla essence

  • 1 slab chocolate melted and cooled
    —-

  • 2 tbsp frisco coffee powder

  • 1 tbsp milk
    (Mix together)

  • Coffee glace
  • 1 tsp instant coffee

  • 1 tbsp hot water

  • 1 finger slice softened butter

  • 1 tsp vanilla essence

  • 1 cup icing sugar sifted

Directions

  • Beat eggs and sugar until white and fluffy.
  • Fold in the sifted dry ingredients.
  • Add the liquid and beat until combined.
  • Pour into a well-greased bundt cake pan.
  • Bake at 180 for 30 minutes.
  • Cool completely and drizzle coffee glace or caramel ganache over , sprinkle chopped macadamias.
  • Coffee caramel ganache
  • Beat the caramel treat in a bowl.
  • Add the Nestle cream and the rest of the ingredients, beat until well combined.
    * this recipe can be halved
  • Coffee glace
  • Dissolve coffee in water.
  • Melt the butter in microwave on defrost setting in a bowl.
  • Add all the ingredients to butter and mix untill well combined.
  • Drizzle over cake and decorate with chopped nuts.
